Coming out of Fairhope, Alabama, Bill-E’s Bacon is considered by some learned folks to be the best bacon in the world. The small batch bacon starts comes from very special meat, cured for a total of eight days using a very special blend of salts. Speaking to Bill-E of Bill-E’s Small Batch Bacon, it’s easy to see that he’s a man with passion. A passion for pork. It has taken Bill-E over three years to perfect his process. It starts with raising a cross-breed of Berkshire Red and Chantilly White pigs, a cross that yields the best pork belly.
Bill-E acquires the best pork belly raised on 25 small Midwestern family farms. The meat is cured using pink curing salt and heavy brown sugar made with real molasses. The meat is turned every day, then cold-smoked using hickory wood to produce a bacon of near otherworldly quality.
